I have the pleasure of sharing this stewed chicken with potatoes recipe now (I just remembered it when I saw an ad for FoodSaver® lol). I’m Haitian, so I’ve had stewed chicken before, but never with potatoes and zucchini. In the Caribbean, stewed chicken is a popular dish that the culinary traditions of African and indigenous peoples have influenced. Deliciously Simple Stewed Chicken With Potatoes Recipe
Stewed chicken is a classic Caribbean dish packed with flavor and warmth, perfect for cozy family dinners or gatherings with friends. With a few simple ingredients and minimal preparation, you can whip up a hearty and satisfying meal that will leave everyone coming back for seconds.
While stewed chicken is commonly associated with Caribbean cuisine, its origins can be traced back to a broader history of stewing meats in various cultures around the world. The concept of stewing, which involves cooking meat slowly in liquid over low heat, has been practiced for centuries across different regions.

Ingredients
- 1 ½ lbs chicken pieces (bone-in, skin-on thighs or drumsticks work well)
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 potatoes, peeled and diced into chunks
- 2-3 carrots
- 1 large zucchini
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon brown sugar
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 teaspoon allspice
- Salt and pepper to taste
- 1 ½ cups chicken broth or water
- Fresh parsley or green onions for garnish (optional)
Instructions
Prepare the Chicken
- Wash your chicken using the salt, vinegar, and lime method (if you know, you know).
- Rinse under cold water and pat it dry.
- Season the chicken generously with salt, pepper, paprika, and allspice. Rub the seasoning into the chicken to ensure it’s well coated.
Brown the Chicken
- Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat.
- Add the seasoned chicken pieces to the hot oil and brown them on all sides, about 5 minutes per side. Remove the chicken from the skillet and set it aside.
Saute the Aromatics
- In the same skillet, add the diced onion, minced garlic, and diced bell pepper. Saute until the vegetables are softened and aromatic, about 3-4 minutes.
- Add the diced potatoes, and carrots to the skillet, stirring to combine with the sauteed vegetables.
Create the Stew
- Return the browned chicken pieces to the skillet, nestling them among the vegetables and potatoes.
- Add in the zucchini
In a small bowl, mix together the soy sauce, Worcestershire sauce, brown sugar, dried thyme, and chicken broth or water. Pour this mixture over the chicken and vegetables in the skillet.
Simmer and Cook
Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet with a lid and let the chicken and potatoes stew gently for about 30-40 minutes, or until the chicken is cooked through, the potatoes are tender, and the flavors meld together. Stir occasionally to prevent sticking.
Serve and Enjoy
- Once the chicken and potatoes are cooked, taste the stew and adjust the seasoning if necessary.
- Serve the stewed chicken and potatoes hot, garnished with fresh parsley or green onions if desired. Enjoy this comforting and hearty dish with rice, crusty bread, or your favorite side dish.
