Signature Cuts® English Style Battered Haddock Fillets Po’ Boy Sandwich with Cajun Sauce
Ingredients
- 1 package of High Liner® Signature Cuts® English Style Battered Haddock Fillets
- 4 hoagie rolls or French baguettes
- 1 cup shredded lettuce
- 1 large tomato, sliced
- 1/2 cup pickles, sliced
For the Cajun Sauce:
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 4 teaspoons of capers
- 1 teaspoon of horseradish
- 1 teaspoon Cajun seasoning
- 1 tablespoon lemon juice
*Can be made ahead and stored in the fridge for up to 3 days.
Instructions
1. Prepare the Haddock Fillets:
– Preheat your oven according to the package instructions and bake the High Liner® Signature Cuts® English Style Battered Haddock Fillets until golden brown and crispy.
2. Make the Cajun Sauce:
– In a small bowl, mix the mayonnaise, Dijon mustard, Cajun seasoning, smoked paprika, garlic powder, and lemon juice until well combined. Adjust the seasoning to taste.
3. Assemble the Sandwiches:
– Slice French baguettes lengthwise. Toast them for a few minutes until golden brown.
– Spread a generous amount of Cajun sauce on both sides of the bread.
– Place a baked haddock fillet on the bottom half of each roll.
– Top with shredded lettuce, tomato slices, and pickles.
– Close the sandwich with the top half of the roll.
4. Serve and Enjoy:
