You guys remember how I bragged about my daughter’s love for food (read it here) when she was a baby? Yea..that didn’t last long. She’s very selective (*cough, picky*) when it comes to food. She won’t eat eggs, she doesn’t like cheese, only bite off a piece of a banana, and even though my daughter loves bread, she gets bored after a while. Sigh, breakfast is the worst! I’m always searching for something new that she might like. A few weeks ago I was getting ready to throw away some ripped bananas when I thought; why not make mini banana muffins. Worst case she doesn’t like it then more for me!
Delicious Mini Banana Muffins
I’ve made banana bread with the Little Man before, and that was ah-mazing but a bit too sweet for a toddler. The last thing I wanted to do is get her sugar high first thing in the morning. I stumbled on this recipe here, and since I had all the ingredients that I needed, I went with it.
I made a few of the mini banana muffins surprisingly enough; she ate two!! Which is rare so you KNOW I was happy! I’m so glad I found the recipe, and if you have picky toddlers (that doesn’t have any food allergies), you should totally give it a try.

Yum! They look delicious. With kids sometimes they’re palates are hard to please. It will get better with age. Right now my seven year old enjoys salmon and shell fishes. Odd for seven, but since I involve him in cooking, he’s been a lot better at trying new foods. My five year old, not so much.
