High Liner® Canada Signature Cuts® Beer Battered Haddock Bowl With Mango Salad Dressing Recipe
Ingredients
High Liner® Signature Cuts® Beer Battered Haddock fillets
For the Mango Salad Dressing:
- 2 ripe mango, peeled and diced
- 1/4 cup olive oil
- juice of one lime
- 1/2 cup of parsley
- 2 tablespoons maple syrup (or honey)
- 1 jalapeño (remove the seeds if you don’t want it too spicy)
- Chili flakes (optional)
- Salt and pepper to taste
For the Bowl:
- Cooked rice or quinoa
- Sliced cucumber
- Sliced red onion
- Shredded carrots
Instructions
1. Prepare the Haddock in a preheated oven and according to the package instructions (we use the Airfryer).
2. Cook your washed white rice. You can use the stovetop method or a rice cooker if you have one. You can also use quinoa or brown rice if you prefer.
3. Make the Mango Salad Dressing:
– Combine the diced mango, olive oil, jalapeño, chili flakes, lime juice, maple syrup, salt, and pepper in a blender or food processor.
– Blend until smooth and creamy. Adjust the seasoning to taste, adding more maple syrup or lime juice if desired.
4. Assemble the Bowls:
– Divide cooked rice among serving bowls.
– Top with sliced mangos, red onion, and chopped cilantro.
– Place a beer-battered haddock fillet on top of each bowl.
– Drizzle with the mango salad dressing.
– Serve with lime wedges on the side for squeezing over the bowl before enjoying.

Note: Feel free to customize your bowls with additional toppings, such as shredded cabbage and sliced radishes, for added flavor and texture. We skipped on adding bell peppers since my teen doesn’t like it.
