Easy and Delicious Bruschetta With Bocconcini
Below is my take on the classic Bruschetta. I’m fully aware the original recipe uses fresh garlic and fresh basil. I try to stick to the recipe as closely as possible while using ingredients that I already have on hand. The week that I made this recipe, I had just placed an online grocery order on Voilà but forgot to order both garlic and fresh basil! lol Still, the recipe turned out delicious, and I will definitely be making it again!

Ingredients
- 1 baguette or Italian bread, sliced
- Epicure Bruschetta seasoning
- 1 cup cherry tomatoes, halved (can also use 1 large tomato)
- 1 cup bocconcini (small mozzarella balls), sliced
- Extra virgin olive oil
- Balsamic vinegar (optional)
- Salt and pepper to taste
Instructions
Preheat your oven to 375°F (190°C). While the oven is warming up, let’s prepare the tomato topping.
Prepare the Tomato Topping
In a bowl, combine the diced tomatoes, Epicure Bruschetta seasoning and extra-virgin olive oil. Mix well to ensure the flavors meld together. Add salt and pepper to taste, keeping in mind the saltiness of the bread later. Add the bocconcini and mix well.
Slice and Toast the Baguette
Cut the French baguette into diagonal slices, about half an inch thick. Place the slices on a baking sheet and toast them in the preheated oven for 5-7 minutes or until they turn golden brown. Keep an eye on them to avoid over-toasting.
Top with Tomato Mixture
Once the baguette slices are toasted to perfection, take them out of the oven and let them cool slightly. Spoon the tomato mixture generously onto each slice, ensuring a delightful mix of tomatoes, basil, and garlic on every piece.
Optional Drizzle

I just had a semi bland Everything bagel with a mild queso dip for breakfast, but I was imagining the velvet-y buttery-garlic flavor of a butter and onion bruschetta loaf like they used to make at the Italian Market in Farragut. I delivered for a service called Take Out Taxi looong ago in my twenties, lol.
