Easter is right around the corner. What better way to celebrate than to bake some yummy lemon cookies with buttercream topping. This recipe is very easy to follow.
Lemon Cookies with Buttercream Topping
Ingredients:
2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1/2 cup butter
1 1/2 cups sugar
1 large egg
1.2 tsp vanilla
2 tbps lemon juice (approximately half of a medium-sized lemon) and the rind of two lemons
Direction:
Step 1. Preheat oven to 350 degrees and prepare a cookie sheet with either parchment paper or non-stick spray
Step 2. In a medium-sized bowl, combine your dry ingredients: flour, baking powder and salt
Step 3. Making butter sure your butter is at room temperature, in another medium-sized bowl, mix together butter, sugar, egg, and vanilla
Step 4. Take your dry ingredients and slowly start folding them into your butter mixture. Fold in and mix until smooth. Add lemon juice and half of your lemon zest
Step 5. Roll into 1 inch balls and bake 12 to 14 minutes. Once the cookies are cool, use your favorite buttercream recipe (homemade or store-bought) to ice them. Sprinkle with the remaining lemon zest. Makes about 36 cookies.
How delicious does this sound! Make a batch of these cookies and serve them for Easter or any time really. All I’m missing is some homemade sweet tea to go with these delicious cookies. I feel like having a tea party now!
